In the little town of Robstown, Texas, is Cotten's BBQ. This is between Corpus Christi and Kingsville. We used to stop in a campground in Corpus Christi and go down there for dinner. When you sat down the immediately brought you some cheese and crackers. When they brought your meal of beef or ribs, it was placed in front of you on a piece of butcher paper. No plate. You had the meat, a slice of onion, a slice of tomato and a jalepeno pepper all on this paper. They did put the beans in a bowl. This with a beer made a very enjoyable and different meal.
We went into Blackbeards on South Padre island to eat. We were surprised to see everyone eating doughnuts and drinking beer.We didn't think these went together too well. We soon learned that these were not doughnuts but onion rings. The best I ever ate. They then had a country fried steak that more than covered your plate. We always asked for a doggie bag. We didn't even have a dog.
Another local couple and my wife and I went on a champagne breakfast cruise from South Padre Island. I won't name the other couple, I will call them Bill and Betty to cover up for them. My wife Evelyn did not drink and Bill was not feeling very well. So neither one of them drank any champagne. But for some reason every time the waitress came by their glasses were empty and Betty and I were sipping on ours. They had the usual breakfast buffet. Pancakes, scrambled eggs with bacon and sausage. Betty and I really had a good time on that trip.
On Sundays in Texas we used to go quite frequently to the Echo Hotel in Edinburg. They had a very good buffet. But the main reason we went was to see an ice sculpture at the beginning of the food line. I don't know who did the sculpture, but they were very good at it.
We did some spelunking in Wind Cave National Park in South Dakota. After going through the cave we ended up in the dining room of the Park. Here we ordered our first buffalo burgers. Hey, a buffalo burger with some chips and a Colt 45 beer made a wonderful meal.
We used to travel with a couple that always said there is a Ponderosa or Cracker Barrel or some other chain, let's stop there. We liked to stop at the local restaurant. We have met some fine folks there. The local restaurant had local people and they were interesting to talk top.
Maybe more later.
REMEMBER ME
Do not grieve for me now
I am gone.
I ache for
you my dear
For you must
go your way alone,
Along the paths we walked
together.
Memories must fulfill you
now.
As we lived
and loved and struggled
Our life was
abundant and warm,
Success and happiness prevailed.
I know you do not like to
be without me,
And dread each
day that we're apart.
But think of
all the time we had together,
Some sad, but mostly happy,
smiling days.
In your mind and in your
heart
I am there
still
And there I
will remain
Beside you forever...even
to eternity.
Remember me with pleasure
and delight
And, oh, my
love
Please, do
not grieve...
Remember me...with joy.
